Cooking while I work
December 8th, 2008Before I left for work this morning I put the following in my slow cooker:
- 4 cups of chicken broth
- 1 boneless, skinless chicken breast
- 4 cloves of garlic, minced
- 1 small bulb of fennel, trimmed and sliced
- 1 small onion, chopped
- Freshly ground pepper, to taste
It’s been cooking on low all day. When I get home tonight I’ll add:
- 1 can of whole tomatoes and juice
- 1 can of cannellini beans, drained
- 1 package of frozen leaf spinach, thawed
I’ll turn the heat to high and let cook another hour or so.
When I was home at lunch the soup smelled wonderful. I’m anxious to try it this evening.
